Mainstreaming of Natural Sweeteners: From Promise to Perfection

With the announcement late last year that FDA had no objections regarding safety of certain Reb-A (stevia-based) sweeteners for use in foods and beverages, stevia, once solely a supplement ingredient, leapfrogged into the mainstream. Suddenly (or perhaps not so suddenly), reduced-calorie, natural sweeteners became much more viable and practical for use in large CPG applications. It may appear CPG companies are flocking to these natural alternatives in a flurry of reformulation activities... or are they? Explore the pros and cons of the new sweetener game. Just what does the end game look like? Have all taste challenges been 'licked'? Is a direct replacement the best economic or formulation solution? Speaking of formulation, do all sweeteners really behave equally, and what does the future of blending look like? And are all interchangeable from a regulatory point of view? These questions, analysis of market demand, and more will be discussed and debated by a faculty of subject experts in this 2-day intensive and featured track.
